Bangkok, Thailand CNN —On the surface, Thailand’s annual Songkran festival appears to be just one great big water fight. Pipad Krajaejun, a history lecturer at Bangkok’s Thammasat University, says it’s difficult to pinpoint exactly when the water fights became such a key part of the festival. (We’ll share more on the water fights below.) Some towns limit the water fights to one day, so be sure to check ahead if you’re planning to join the battles. Thailand is renowned among hard-charging tourists for nightlife in Bangkok, full moon parties on Koh Phangan island and hedonistic walking streets in Pattaya. It’s also a magnet for the bohemian and wellness crowds who flock to the mountain destinations of Chiang Mai and Pai. But mostly ignored by foreign tourists is Lampang, in Northern Thailand. This utterly charming, riverside city of about 90,000 people has preserved the historic architecture and stately squares from its days as a major city in the ancient Lanna kingdom and a hub in the teak lumber trade. Wooden temples from centuries ago and two-story teak mansions from the late 1800s and early 1900s still stand, and alongside the Wang River, the streets in the Kat Kong Ta enclave are like an open-air museum of well-preserved Chinese shophouses and European gingerbread-style buildings.

Visit Bua Thong Waterfall — aka "The Sticky Waterfall." Because of the limestone deposits, the waterfall isn't slippery. There is an extravaganza of cleanliness to be found just behind an unmarked door in a corner of the Brooklyn Navy Yard. This is the home of Kingbridge’s massive new cleaning facility, which opened in January 2020. It’s where a fastidious, highly labor-intensive process takes place, one Mr. Aviles believes is necessary for clothing to be cleaned properly. He offered customers hot chocolate in the winter and lemonade in the summer, and soon learned to press shirts himself. They then tuck them into a massive wet or dry cleaning machine, or hand-clean them if the situation is dire.

A FEW HOURS before service at Ilis, a newly opened restaurant in Greenpoint, Brooklyn, two-dozen or so young cooks in crisp black-linen shirts and olive-drab aprons stand around tables and islands, deep in prep. In one corner of the former warehouse, two of them carefully seal large surf-clam shells with beeswax and bind them with twine. Soon these will be filled with a combination of clam juice, clarified tomato juice and dashi, to be slurped by diners paying $295 for a 12-course dinner. At a worktable, dozens of defeathered Khaki Campbell ducks await 21 days of dry aging. It may sound like the standard set-up for a high-end restaurant of a particular Nordic bent, but it isn’t.

Chipotle Mexican Grill founder Steve Ells built an empire on chicken and beef burritos made in assembly-line fashion. Now he’s dropping the meat and is adding machines. Ells early next year will open in Manhattan the first location of Kernel, serving meat-free sandwiches, salads and sides made to order. A skeleton crew will run the restaurants alongside robots, making faux chicken sandwiches and sides such as cucumbers with wild rice.

This was Day 1 of an eight-day voyage that Mr. Rivera and his brother Craig Rivera had embarked on to bring Geraldo’s boat from Hampton Bays, where he had spent an extended vacation with his wife and youngest daughter, to the suburbs of Cleveland, where they live. As Mr. Rivera considered what his future might be, he wanted and maybe even needed an adventure.

Earlier this year, Mr. Petrsoric, 78, was working alone around 10 p.m. when 60 or so people filed in after Broadway shows let out. He found himself going back into machine mode, a calm beacon of cocktail efficiency. He expressed his amazement, which Mr. Petrsoric subtly acknowledged, with a hand placed gently to his heart. While he appreciated the accolade, he gives the same polite treatment to the star-struck as to stars like Mr. Broderick, as well as cast members, directors, producers, lyricists and composers from nearby productions. He was about to serve against a wall to himself when a young blond woman approached. He would have loved an opponent, sure, but what he really needed was somebody to hold the court while he ran to the men’s room.
